Hope your enjoying you're summer ! I know this is different than my usual makeup or pageant post but this was so easy I had to share with you !! I was at home the other day , and craving something that was sweet and full of carbs lol. I had some red velvet cake mix and some pancake mix and thought ..hey why not ? I have never tried to make red velvet pancakes before so i want sure if just adding red velvet cake mix to the pancake mix would work. I decided to look online for recipes and found out that i wasn't the only person that has tried it before. Its an easy cheat way to make red velvet pancakes. I also looked on pinterest for a easy recipe for cream cheese icing because...well you cant have red velvet pancakes without it lol ! .
This came out DELICIOUS ! The pancakes were fluffy and so tasty. And the cream cheese icing was delicious and made easily with all ingredients you most likely already have at home. I never knew icing could be so easy to make. I for sure will be making this again in the future ...not any time soon though (i cant imagine how many calories this was...not that i care lol).
Red Velvet Pancakes
Aunt Jemima Complete Pancake mix - 3 cups
Red Velvet cake mix - 1 cup
Cream Cheese Icing :
Cream Cheese (softened) - 3 tbsp
Butter (softened) - 2 tbps
Powdered Sugar - 3rbsp
Vanilla extract- 2 tbsp
Milk (to desired consistency)
Mix Complete Pancake mix with Red Velvet Cake mix and a cup of water. Mix until lumps disappear.
Mix cream cheese, butter, powdered sugar , and vanilla extract all together. Once mixed add a few teaspoons of milk until you get your desired consistency. The icing will initially be thick. I wanted the icing to be a bit runny so it could easily spread on my pancakes. I didnt use a beater to mix these ingredients (it would have been so much easier). I used a fork which took some power but it got the job done .Mix until the icing is free of lumps.
There you have it , spread your icing on your pancakes while they are still hot and be ready for a treat ! I have some time this summer and i am always on pinterest looking for easy recipes using whatever ingredients i have at home. Want more post like this ?
*You dont have to use exact measurements. I only made enough for one person, so it wasn't that much.
